Sharon's Plum cake:
Pre-heat oven 325°
2 cups flour
1/8 teaspoon cinnamon
1 cup sugar
1/8 teaspoon ginger
1 tablespoon baking powder
4 egg whites
½ teaspoon salt
1 cup milk
2 red plums (thinly sliced)
½ cups butter
Grated zest of 1 orange

Combine with a mixer all ingredients except butter and plums. Fold in
butter and plums. Pour into a prepared 9x3-loaf pan. Bake for 45-50
minutes. Let cool before slicing. Top each slice with Sharon’s Plum Sauce*.
*Sharon's Plum Sauce (serve
warm):
2 plums (peeled, pitted and sliced thin)
1 cup water
2 tablespoon butter
½ cup sugar
2 drops red food & 1 drop blue food color
Combine all ingredients in a saucepan and boil until it reaches a
consistency of marmalade. |
